Fish and chips are similar to Nashville-style fried chicken. It’s a spicy match and a fun summer meal idea. It’s not hot in your mouth, but you’ll appreciate having beer on hand to wash it off. I’d like some spice oil to dip my fries and mix it with mayonnaise. Of course you can quit making your own fries and buy a bag of frozen, but we love the opportunity to use the cold oil method for french fries. . Also, you have to oil the fish beforehand to fry it, so here it is best to make your own.

Large reset or Yukon Gold Potato

Vegetable or peanut oil, for frying

Fish

1 1/2 c.

All purpose flour

(12-oz.) Bottle light beer

2 lbs

cod, cut into strips about 1 1/2 “thick and 3” long.

French fries

  1. Preheat oven to 200. Cut the potatoes lengthwise into 1/4 “- thick pieces, then cut each piece into 1/4” – thick sticks. Transfer the potatoes to a large, heavy pot equipped with a deep fry thermometer and add enough oil to cover 1/2. Heat over high heat and bring to a boil. Cook for 15 minutes without interruption, then set aside to fry with tongs. Continue to cook for another 5 to 10 minutes, until golden brown.
  2. Using a chopped spoon, transfer the fries to a large baking sheet. Save the oil in the pot. Season immediately with salt. Transfer to oven to keep warm.

Fish

  1. In a large bowl, combine flour, corn starch, red pepper, garlic powder, paprika and salt. Add the beer, egg, and hot sauce and stir until smooth. Let sit for 10 minutes.
  2. Heat the preserved oil to medium heat until the thermometer registers 375. Dry the stomach code with paper towels. Season with salt and pepper. Dip one piece of code into the batter, let the extra drip. Carefully fry in oil and add more fish, but be careful not to overcook the pot and turn halfway through, until golden and the fish are cooked through for 5 to 6 minutes.
  3. Transfer to a baking sheet lined with paper towels. Carefully remove 3/4 cup of oil from the pan, strain if necessary to remove excess batter.

Spicy oil

  1. Stir in the red pepper, paprika and garlic powder in a medium heat proof bowl. Add honey and preserved 3/4 cup oil and stir to combine. Season with salt.
  2. Brush the whole fish with oil. Serve the fish and fries with the remaining oil if desired.
